This work aims to valorize Algerian red beetroot as a biomass source for the production of bioethanol through alcoholic fermentation using Saccharomyces cerevisiae. The study focused on two key process parameters: the effect of acid hydrolysis of the substrate and the initial concentration of fermentable sugars, with the goal of optimizing ethanol yield.&#13;
In parallel, the solid residues resulting from the fermentation were recovered and treated through aerobic composting, as part of an integrated valorization approach. The resulting compost was characterized by physico-chemical analyses (pH, moisture, C/N ratio) to assess its stability and maturity.&#13;
Experimental results showed that acid hydrolysis significantly improves sugar conversion into ethanol, and that the initial sugar concentration strongly influences fermentation efficiency. This approach demonstrates the feasibility of a coupled bioethanol/compost process on a small scale, aligned with sustainable development and rational management of agricultural waste.
