dc.description.abstract The optimal extraction conditions for the recovery of total phenolic compounds and antioxidant activity from turmeric were analyzed using response surface methodology (Behnken Box). The effects of extraction temperature (25–50 °C), extraction time (60–120 min), and sample/solvent ratio (10–20 g/100 mL) were studied. Second order polynomial models produced a satisfactory fitting of the experimental data with regard to total phenolic content (R2 = 0.9869, P = 0.0004) and antioxidant activity (R2 = 0.9903, P = 0.0002). Response surface analysis showed that the optimal extraction parameters that maximized the extraction of antioxidants were a temperature of 36.25 °C, an extraction time of 107.86 min, and sample/solvent ratio of 15.44 g/100 ml. The optimal values for total phenolic and IC50 were 602.846 mg GAE/g DM and 1.54 μg/ml, respectively. The experimental values agreed well with those predicted, indicating the suitability of the model and the success of response surface methodology in optimizing the extraction conditions. Turmeric known for its antioxidant, antimicrobial and anti-inflammatory properties can help reduce bacteria in the mouth, prevent infections and soothe irritated gums and therefore can be used in the formulation of toothpaste. en_US
