Abstract: The agricultural and agro-industrial activities generate important amount of waste which constitute a sure nuisance for the environment. This waste, rich in organic matter, can be however recycled by biotechnological processes which constitute a solution of choice to remedy the problems of pollution. Ethanol is a compound with a wide usage range from chemistry to food. However, the current market growth mainly concerns the use of ethanol as fuel. Dates production occupies an important place in the Algerian agriculture. A part of this production is not sold. The validation of this waste allows putting, on the national market, a new generation of strongly appreciated products and often imported. In this study the production of ethanol is performed in two steps, namely: fermentation then distillation., Under optimal conditions of ethanol production, 128.83 g /L of sugar , pH 5.5 and 31.9 °C, saccharomyces cerevisiae produced in flasks conditions, after 14 h of culture, 36.68 g / L ethanol, recording a yield of 0.34 g ethanol / g of sugar.
