Abstract: Medicinal plants are used for their beneficial properties. Far from being medicines, they help to strengthen our defenses and strengthen our metabolism: they are therefore to be used in prevention. Indeed, much of the current research interest is focused on the study of antioxidant molecules of natural origin. In this context, our work focuses on the phytochemical and biological study of a medicinal plant (officinal ginger), of the genus Zingiber and of the family of Zingiberaceae whose rhizome is used in traditional medicine. Our study begins with a screening (phytochemical screening) of the secondary metabolites found in the hydroalcoholic extract of rhizome of zingiber officinale, After, the quantification of polyphenols, total flavonoids and tannins by assay according to the recommended protocols. We also tested the antioxidant activity of these extracts by adapting three methods: DPPH, ABTS and Phenanthroline, and the anti-Alzheimer activity (anti-acetylcholinesterase). Finally, this work allowed to provide elements of understanding of the relationship between the secondary metabolites contained in the hydroalcoholic extract of rhizome of zingiber officinale, and its biological activities.
